Vegan Cream of Celery Soup

The benefits of celery begin with it being an excellent source of antioxidants and beneficial enzymes, in addition to vitamins and minerals such as vitamin K, vitamin C, potassium, folate and vitamin B6.

INGREDIENTS

  • 1 tablespoon coconut oil
  • 3 cloves garlic, minced
  • 2 cups celery, chopped
  • 1 cups pumpkin seeds
  • 1 teaspoon turmeric
  • 1/2 teaspoon sea salt
  • ¼ teaspoon cayenne
  • 1 cups of water
  • 2 cups vegetable broth
  • 1 cup bone broth
  • 1 cup spinach (or greens)
  • 1 tablespoon thyme, minced
  • ¼ cup parsley, roughly chopped
  • 2 tablespoons apple cider vinegar

COOKING TIME

30 minutes

INSTRUCTIONS

  • Add all ingredients into a blender.
  • Blend for 3 minutes.

APPROPRIATE FOR

12PM, 7PM, Detox, Dinner, Focus, lunch, Relaxation, Weight-loss
